Producing ethanol by fermentation

Key ideas1 of 3

Yeast makes ethanol

Fermentation uses enzymes in yeast to convert sugars into ethanol and carbon dioxide. Glucose is a suitable sugar. The products can be summarised as glucose → ethanol + carbon dioxide; a balanced representation is C6H12O6 → 2C2H5OH + 2CO2. The ethanol remains dissolved in the original water, so fermentation produces an aqueous ethanol solution rather than pure ethanol.
